For the ingredients, you will need – 1lb Roma tomatoes, one English cucumber, ½ sliced medium red onion, 2 diced avocados, 2 tablespoons of extra virgin olive oil or sunflower oil, juice of a medium lemon, a teaspoon of sea salt or a ¾ teaspoon of table salt, ¼ cup of chopped cilantro, 1/8 teaspoon black pepper. If you are not very keep on cilantro, you can always use fresh dill instead.

Now, for the preparation part – first of all, place the chopped tomatoes, sliced cucumber, diced avocado, sliced red onion and chopped cilantro into a large salad bowl. Then, add the olive oil and the lemon juice.

Toss the ingredients around gently so that they could all mix up well together. Just before serving it, toss in a bit of sea salt and some black pepper in it.
